Pumpkin Bread with Fresh Blueberries
Pumpkin is used to infuse a richer taste in this pretty berry-studded bread. Pumpkin absorbs flavors easily, so it is a great ingredient for spiced quick breads. Besides being high in beta-carotene, pumpkin is also a natural diuretic, which aids in flushing toxins from the body.
1½ cups cashew butter
1 cup canned pumpkin puree
1 large banana
2 large eggs
1 cup almond flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
Pinch sea salt
1 cup fresh blueberries
Coconut oil to grease the loaf pan
